At Offbeat Brewery #Crewe some weeks are busy

June 15, 2015 // 0 Comments

and some are just ridiculous. Having not been able to brew on Friday because the door handle of the brewery rusted up and fell apart (seriously!), we’re chasing our tails today trying to catch up with a huge brew of Outlandish Pale.  At some point I need to run down the road to Staffordshire Brewing and get a load of bottle labels as we’ve so much new stuff that needs labelling up. Tomorrow sees another big brew of Disfunctional Functional IPA while the van heads out to Liverpool [...]

Middlewich Folk And Boat, only 10 days to go!

June 9, 2015 // 1 Comment

After a crazy busy weekend with #FirstyFriday followed by the bar open on Saturday and fig pie rolling in Wybunbury with the Lest We Fig-et on tap, we’re looking forward to a calmer weekend with just the brewery bar open.  But the following week we’re off to Middlewich Folk and Boat Festival – if you’ve not been before it’s definitely worth a look and wander round the pubs and event sites to catch bands, dancers and of course find some beers. You’ll find [...]

Oddity #5 – English Hopsplosion

June 1, 2015 // 0 Comments

Tomorrow sees the brewing of Oddity #5, English Hopsplosion.  This may not be that ‘out there’ compared to some of the Oddities so far but something I want to do to kind of prove myself wrong.  You see I’m one of these biased people when it comes to hops; I’ll rave about the American ones, the New Zealand and Australian ones but not the English ones.  We do use some in the brewery but they tend to be more in the background like with the Way Out Wheat except we want [...]

Oddity overload!

May 11, 2015 // 1 Comment

These Oddities are flying out! #1 Honey Cream Ale is all gone in casks, we’ve a few bottles left. #2 Berliner Weisse is all kegged and bottled – labels should hopefully be in tomorrow and the bottles will be ready to go #3 Herby Saison is smelling and tasting rather gorgeous…subtle and not overpowering but definitely getting those amazing Scarborough Fair aromas through.  Kegging and casking at the moment and then it’s next up on Caz’s bottling list. #4 Hawaii [...]

Opening Times

April 29, 2015 // 0 Comments

We don’t have set opening hours for the simple reason there isn’t always somebody on site – you’re best to call (07502 096 438) ahead to confirm.   As a general rule we brew Mondays, Tuesdays and Fridays so you can pop by after 10am to pick up bottles to take away. See the #FirstyFriday page for details of our scheduled open nights and from May to end of August we aim to have the bar open on Saturdays from 12 to [...]

Oddity 3 – Herby Saison

April 27, 2015 // 0 Comments

We’ve a cold room with a bit of everything in, so tomorrow seems like a good opportunity for another play with an Oddity.  I can’t take credit for this recipe, I’ve twisted and tweaked it a bit as I loved the sound of it and the original brewers were good enough to share it.  So we’re going for a bit of a saison with a load of fresh herbs in it, probably going to be a light to medium amber colour and a load of citrusy hops which will hopefully work alongside.  Our [...]

More opening hours at Offbeat

April 22, 2015 // 0 Comments

It’s just over a week away until #FirstyFriday on 1st May so while the beer list is forming (more about that in a min) here’s a good opportunity to talk opening times. Now we have a full premises licence we can sell from site every day but that’s never been the plan.  Anyone who has ever visited on a non-open day can tell you about the amount of stuff we have to move to create the space for #FirstyFriday to happen.  We wanted a bit more flexibility to open but not to [...]

Oddity 2 – Berliner Weisse

April 3, 2015 // 0 Comments

Today, among all the #FirstyFriday setup, I’m mashing in Oddity 2.  I have to admit this brew scares me, it’s starting to delve in to the world of sours which I’ve drunk but never brewed before and it’s not brewing the way I’m used to with leaving wort sat in the copper for a few days to let the acidity increase. A Berliner Weisse is pale and I’m expecting this to be hazy because there is quite a lot of wheat malt involved.  Hops are not the main [...]

Oddity 1 – Honey Cream Ale

March 26, 2015 // 1 Comment

So today sees the brewing of Oddity 1, a Honey Cream Ale.  We thought we would break you in gently as Oddity 2 is going off on a sour path! Cream Ales are an American style, not seen over here so much but great in warm weather and I’m optimistic that’s got to get here soon so we’re going to be ready for it!  Cream ales are related to lagers, pale in style, clean and crisp with a dry mouthfeel.  It’s going to ferment on an ale yeast and be cold conditioned [...]

Off At A Tangent…new beer range, “The Oddities”?!

March 19, 2015 // 0 Comments

I’ve been toying with the idea of expanding our beer range and going with some new specials but as one off brews.  Some in cask, some keg, some bottle and maybe a mixture of all.  Our core range of beers will stick around, I’d rather sell my soul than stop brewing Disfunctional Functional IPA, but we’re keen to learn and explore…delve in to the world of sours, more barrel ageing, more weird and wonderful ingredients.  If anything our name has been made off the back of [...]
