Danish Pancakes

October 10, 2015 // 0 Comments

I recently caught an American food show on TV where they had these Danish pancakes, or aebelskiver. A quick web search found a couple of the pans so we thought we would give them a trial run for the Beer Box Bites sides of the business. Of course we had to add beer to the batter and have been experimenting with the pan and different fillings – the craft barrel aged feta is awesome with caramelised onions and chorizo works particularly well too!  Look forward to having these on [...]

Oddity 9, my second sour

October 7, 2015 // 0 Comments

An opportunity approaches this week where we are not brewing Friday due to trade day at Indy Man Beer Con so on Thursday I’m planning my second kettle soured beer which I can then leave to do it’s thing over the weekend.  It’s going to start with the same base recipe as Oddity 2, Berliner Weisse and then have Kaffir Lime leaves used in the boil rather than hops. “The Kaffir Lime has a dark green, warty skin which inspires an alternative name, leprous lime. There is [...]

Hop seminar & walk with @charlesfaram

September 9, 2015 // 0 Comments

I’ve spent yesterday and today down near Malvern on a hop farm learning more about one of our key ingredients.   Yesterday involved a bunch of seminars, it was interesting if a bit depressing – the hop crops across the world have been blighted by a series of too hot weather, droughts and even hail. Hops from this year’s harvest are going to shoot up in price….”2007″ was mentioned which will be putting fear in to anyone who was brewing then and hops [...]

Dark beer season approaches

August 21, 2015 // 0 Comments

I know many people like their dark beers but we can’t escape the fact that through the summer it’s all about the pales and we struggle to shift the darker numbers.  Now the weather is warm but less then average I’m thinking over bringing some darker numbers in for September. First up will be the Off Kilter Porter with it’s peppery edge and then thinking on a smoky syrupy sort of stout.  I have an idea in my head but it’s not taken full shape and in to the actual [...]

Slowly slipping back into the routine…

August 12, 2015 // 0 Comments

Well kind of. I’m shattered, still recovering from the weekend and all that went in to the setup plus a crazy week of sales too.  But gradually we are getting back to normal! Firstly, huge thanks to everyone that came and supported  Firsty Friday Festival…the sun was shining, the beers flowed pretty equally so we still had a good choice through the weekend and we had a great time. A lot of help came from people to make it happen, they know who they are and I’m [...]

Banjaxed Barrel Series

July 22, 2015 // 0 Comments

Having largely forgotten the word “banjaxed”, I saw it in a book last night and thought it seemed perfect for one of the Offbeat tangents…barrel ageing and sours. It’s a little bit on the back burner at the mo as we need a space away from the brewery to really get in to this as we can’t risk infection and we haven’t a lot of space to leave barrels sat for months on end. In the meantime, research is underway. The arduous task of tasting loads of other [...]

Oddity #6 with @OthertonAleman

July 9, 2015 // 0 Comments

After a quick delivery in to Chester it’s back to the brew hall to make Oddity #6, a collaboration with Otherton Ales, our cuckoo brewer. Usually with collaborations both brewers are there to actually make the beer. Today I’m in Crewe and Dave is in Birmingham and sorting out Birmingham Beer Bash stuff so we’re collaborating electronically and I’m leaving him all the big cleaning jobs for when he gets back! Oddity #6 Tripelette Saison – doesn’t make a huge [...]

August Firsty Friday, or, Firsty Friday Festival

July 2, 2015 // 0 Comments

As July #FirstyFriday comes around tomorrow I thought it was a good time to tell you about the August event, 7th to 9th at the brewery. We go large for this one month and go all weekend open from 12 to 11pm Friday and Saturday and 12 to 5pm Sunday. There should be about 30 beers and ciders, I’m beavering away in the background putting a list together but some of the breweries should include Steel City, Founders, Magic Rock, Quantum, BlackJack, Waen, Axiom, Siren and we are adding to it [...]

At Offbeat Brewery #Crewe some weeks are busy

June 15, 2015 // 0 Comments

and some are just ridiculous. Having not been able to brew on Friday because the door handle of the brewery rusted up and fell apart (seriously!), we’re chasing our tails today trying to catch up with a huge brew of Outlandish Pale.  At some point I need to run down the road to Staffordshire Brewing and get a load of bottle labels as we’ve so much new stuff that needs labelling up. Tomorrow sees another big brew of Disfunctional Functional IPA while the van heads out to Liverpool [...]

Middlewich Folk And Boat, only 10 days to go!

June 9, 2015 // 1 Comment

After a crazy busy weekend with #FirstyFriday followed by the bar open on Saturday and fig pie rolling in Wybunbury with the Lest We Fig-et on tap, we’re looking forward to a calmer weekend with just the brewery bar open.  But the following week we’re off to Middlewich Folk and Boat Festival – if you’ve not been before it’s definitely worth a look and wander round the pubs and event sites to catch bands, dancers and of course find some beers. You’ll find [...]
